I LOVE the Gingerbread Martini from Outback and this year I had a huge craving for them at the holidays.  So, I went out and found a couple of recipes online that were supposed to be similar.  I took their suggestions and added a couple of my own to come up with this awesome drink.  I've tested it on a few people now and everyone asked for more!  See if you can fit this one into your holiday parties this year!

1/2 oz Gingerbread Kahlua (I'm sure you could use the regular too)
1 oz Bailey's Irish Cream
1 oz Sweet Cream Flavor Coffee Creamer
1/2 oz Gingerbread Syrup (In the coffee aisle or at a coffee shop)
Pepperidge Farm Gingerman Cookies

Mix the liquids together and shake over ice
Rim a martini glass with crushed gingerman cookies
Place one full gingerman cookie into the glass and pour the liquid over top.  YUM!

NOTE: To make it stronger you could up the kahlua to 1 ounce and you could also add 1 ounce of vodka.  Both work great!

I recently started the "Caveman Diet" and discovered this recipe on Cavegirl Cuisine.  I changed it up a little and came up with this.   I love mushrooms so I might add more mushrooms (including multiple varieties too) next time and less chicken.  This is a very tasty dish!

This is a very easy chili recipe that we enjoy on a nice cold winter day.  Top it off with some cheese, sour cream and maybe even some Fritos or just eat it plain!

I found a rendition of this on Pinterest a while back and last night, in a fight with myself over what I was  going to cook, I rediscovered it.  I changed a few things and also adapted it to a single serving since I was flying solo at the time.
This dish would be really easy to make for picky eaters. I have one in my family that doesn't eat tomatoes and one that doesn't eat feta.  So, you could make it like a pasta bar and let everyone pick what they want to include if you're in a similar situation!

This soup is so easy to make, super quick and delicious.  Brown the turkey, add all of the rest of the ingredients and simmer for 15 minutes.  That's about it!  And at around 370 calories, it fits nicely into your diet too!  If the calories aren't all that important to you, try topping it with some crunchy tortilla strips and some sour cream.  Try it for yourself and let us know what you think!

We've heard many great things about Pawley's Island Tavern (Also known as "The PIT") on past trips to the Litchfield Inn and this past trip we got the opportunity to pay them a visit.  With dollar bills all over the walls, very colorful paint, quaint indoor rooms and a spot for bands, the atmosphere here is very fun, but the food is even better!

Famous for their crabcakes and pimento cheese, they left nothing to be desired on these two options for sure.  We started off with the crab balls as an appetizer.  They are the same as their crab cakes only in bite size portions. They were very tasty and full of crab.  

For our meal, we decided to get a little wild and share what they call the Psycho Burger. Boasting the flavorful wonderfulness of their home made pimento cheese, jalapenos, chili, slaw, onions, mushrooms and even an egg, we weren't quite sure how this would taste.  In the end, we both agreed it was one of the best burgers we had ever eaten. I actually ended up craving another one the entire time we were in Pawley's Island!  The meat was very flavorful and all of those toppings blended perfectly in your mouth.  

Feeling like you may need to pay them a visit?  Pay CLOSE ATTENTION to this tip!  You won't see this restaurant from the road and the only way you will find it is by looking for the green mailbox with "PIT" written on it. You might even drive by it because you don't think the road is there.  Yes, that dirt road that looks like it goes to nowhere is exactly where you want to be!

We have driven by this place a few times, noticing there are a lot of cars in their parking lot.  We finally decided to stop.  With a description of "Texas sized" burgers, it being the last day of our vacation AND the last day of fun food before the diet started again, we figured we may as well live it up!  

Turned out this place was great.  Very cool atmosphere with license plates and signatures all over the walls, great service and awesome burgers!  We both went for the burgers since they were listed as the best and oh my, they were tasty!!  Rusty had the 3 Alarm Fire Burger complete with hot sauce, jalapenos and Pepper Jack cheese.  He couldn't stop talking about how great it tasted.   I had the Swiss Mushroom Burger and ate everything on my plate.  With 7 ounces of meatness complete with a whole plate of FRESH CUT fries, I nearly had to be wheeled out of the joint. 

All in all, we will definitely return and hope you will visit too! Let us know about your own experiences, we'd love to hear them!

We can't begin to explain to you how good this is.  You'll just have to make it to try it!   We have made this for the last two Super Bowl Parties and a few other parties in between and needless to say, there is never any left!  Kids and adults love it just the same too!!

Peanut Butter Cheese Ball

Step 1: Beat cream cheese, powdered sugar, peanut butter and brown sugar in large mixer bowl until blended.

Step 2:  Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly forming into a ball shape. (I find it best to put this ball into a small bowl to help it hold its shape).


Step 3:  Freeze for 1 hour 30 minutes or until firm enough to keep its shape. Place peanut butter and chocolate chips in flat dish. Remove plastic wrap from ball and roll ball into morsels to completely cover, pressing morsels into the ball if necessary.


Step 5:  Place ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.) Serve with graham cracker sticks, teddy grahams, or apple slices for dipping or spreading.

We recently had the opportunity to spend one night on the outskirts of Charleston with some friends on the beautiful James Island. They took us to two restaurants we wanted to share with you.

The first was Rita's Seaside Grille on Folly Beach. We have eaten here before for breakfast and had a great experience (the shrimp and grits were awesome), but this time we were able to try lunch. Counting our calories, we went thinking we'd have a nice salad, but when we saw a burger go by, we couldn't help but to try one. We ordered the Jalapeno Burger with fries and it was as wonderful as it looked. The jalapenos are fresh though so beware! They got a little hot! The meat was very tasty and the fries were wonderfully seasoned.


After eating our burger, a neighboring table ordered the barbecue sundae. Oh my. If we weren't stuffed, we'd have ordered that too so we just took a picture and asked about it. Turns out, they put barbecue, queso and mozzerella cheese in a sundae dish with tortilla chips. Now you tell me what could possibly be better that that?? With good food, beer and a view, this is a great little stop next time you're near Folly Beach, SC.




The next morning we stopped at Triangle Char and Bar for brunch as we were headed out of town. Such a fun place with a fun menu too. I had the crab cakes which were two small cakes on fluffy biscuits topped with a poached egg and hollandaise sauce. YUMM! Rusty isn't much of a breakfast fan so he went with the fish tacos. He ate every last bite so they must have been good. While waiting for our food to get there we all shared the cinnamon rolls. I have to say they have an amazing glazed topping that makes them a must have! All in all, with two locations and an open air feel on a nice warm day, this is a great place to stop and have a great brunch!
